Spring has sprung!The spring is bringing some beautiful fresh produce that we would love to share with you in our menu. That being said you will see some changes in our current menu offerings. While some dishes will make the cut, they will still receive a little make over. We are taking great consideration in finding the freshest produce available, grown and harvested as locally as possible. Would you rather that your extra spending dollars go....
It used to be that I would look forward to the Superbowl Sunday. Finger food, barbecues, friends and the fun rivalry at either my place or that of a few parties. It all changed when we opened Cueva Bar. I now had to focus on bringing people to my business, and had to turned down a few invitations to go hang out at someones house.
The first time we had the chance to be open for the Superbowl, we got ready with fun food and hoped that people would be coming in to enjoy tapas, some drinks, and the enjoy the company of others, while watching the game on the screen. It didn't work.
Year two, we tried a different approach. We acknowledge we weren't the place for the typical Superbowl Sunday crowd so we tried reaching out to people who aren't interested in the Superbowl so much that finding a place free of a football game, and the loudness would find their place to go at Cueva Bar. It didn't work either.
Three years have passed, three years we've been closed on this almost National football party, and instead we have now opted to be take the day off. At least our employees, and us are now free to attend our friends super bowl parties!
This year however, we've opted to offer and prepared to cook so that you or your friends don't have to worry about putting all the snack needs together, get all your preparation done, then having to clean before the guests arrive, and then after the guests leave. I've used it on tacos, huevos revueltos, flautas, along with my carne asad or pollo asado. Always trying it on different things, my affairs with the avocado go long time ago. Once I was shocked when I heard Brazilians eat avocado in sweet rather than savory ways. I tried it, I loved it! I now use avocados on my smoothies, and there are still many more ways I need to experiment with this creamy, delicious and healthy fruit. Another way I hadn't had avocado until I traveled to San Felipe Baja California is grilled! Grilled? That's what I said when a chef put his dish in front of me and two other food judges. I saw a grilled mark avocado facing up, next to a few grilled shrimp and pickled onions. I couldn't believe my eyes. I was 35 years old and I had never seen or eaten grilled avocado, but as a food judge, I put my personal judgement on the side, and I learned once again that we must keep our minds, hearts and taste buds open to experience things we don't know, otherwise how are we supposed to expand our life experience? Besides, who wants to just eat avocado one way?
One way to use avocaods it's my all time favorite guacamole. Guacamole is one of those where you can play with the ingredients and achieve simple to exotic results and flavor profiles. It also comes in different levels of acidity, spicyness or chunkiness depending on the household, or restaurant you visit.
So here, I leave Cueva Bar's simple, tasty and balanced guacamole tower recipe for you to make at home, at your next gathering, or just because.
1 lime juice
1 tbsp diced cilantro
1 tbsp diced red onion
1 tbsp diced jalapeño
1/2 tsp chile oil
1/2 tsp evoo
1 pinch kosher salt
1 pinch black pepper
1. Mix all ingredients in bowl
2. Form a tower
3. Serve with warm corn tortilla chips
4. Garnish with chile oil, evoo, pinch of
salt, cracked pepper and a toasted chile de Arbol
