I would like to thank all of you for being part of the Cueva Bar Café story. A day like today is an opportunity to replay some of this year gone mental pictures and embrace them one more time while continuing to moving forward in this affair where food, drinks, and good times are at the centre and glue all those memories built inside the cave with the wonderful community we've built. Today Cueva Bar Café turns nine. I get excited about every day we are open, but today is special for sure. Today nine years ago was the beginning of a new era for my family and me. Jumping into the unknown with only the certainty of having jumped with arms wide open into the abysm hoping the wings work. Nine years fly by quick like a peregrine falcon. The first day we opened on a Saturday, October 23 I experienced cold sweat for the first time. I was nervous as fack! But it all worked out that night and I remember all of our guests, especially Eunice and Pedro who were our neighbours for almost nine years. The dish in the back of our kitchen and the Scotto's front door were separated by a center block wall and just a few steps.
We've had our first website hacked and redesigned 3 times. Our menus have gone from one big ass page and offering empanadas, flatbreads, salads, soups and dessert to what it is now. We tried keeping it stable and printed some very nice easy to clean menus that my friend and colleague chef Obed Torres designed and took on the task of having them printed out.
We have done a year of Meatless Mondays, Monday Collaborations with other chefs, breweries and wineries. We've done a year of different cuisine themed dinners.
It has all been worth it. We've gained lots of great memories and continue to feel excited about creating more experiences with everyone who's part of this story now and in the future.
We at Cueva Bar honour with the utmost responsibility all of our guest's dining experience. The part I personally cherish the most are the relationships we've created along the way.
